FYI: I add a ton more of the seasonings than called for. I get the best results if I add more cumin slowly (you don’t actually want to taste it), the brewer’s yeast liberally, and then salt to preference.
Carol’s Kale Bean Soup
2 medium garlic cloves, chopped
1 cup onion, chopped
5 cups water
2 cups cubed potatoes
3 cups chopped and packed kale
1 ½ tsp. Salt
1 tsp. Cumin
2 tbsp. Yeast flakes (brewer’s yeast)
3 cups cooked navy (white) beans
Steam garlic and onions. Add water, potatoes, salt, cumin, and yeast flakes. Cook on medium to high for 10 minutes. Add kale, cook another 10 minutes or so. Add beans till hot. Serve.
