Carol’s Chili Recipe

I have fond memories of a summer at my Aunt Carol’s house when she cooked this chili.  I didn’t use the crockpot, but cooked it on the stove in the course of an afternoon and it was oh, so easy.  We first had it with cornbread, and it was okay.  Had it again today, this time as haystack beans, and it was FABULOUS.  PERFECT.  WONDERFUL.

Use dried red or kidney beans 5 cups
Cover dried beans with water (several inches above the beans), bring pot to boil. Boil 3 minutes. Let sit one hour. Drain and rinse.

Put beans in crockpot and fill with water to top of pot. Add following:
1 tbsp. Cumin
1 tbsp. Chili powder
1 tbsp. Salt
1 tbsp. Onion powder
1 tbsp. Garlic powder

Let cook overnight.

Next day:
Sautee onions, red bell peppers.
Add a couple of pepperoncini’s and juice to taste.
Add to crockpot.
Simmer, taste, adjust.
